Crab Melt

We make these crab melts often when Levi brings home fresh Dungeness.  I don’t have a precise recipe, I just throw it together.

Ingredients:

  • Mayonnaise
  • Cream cheese
  • Sour cream
  • Bell pepper, chopped
  • Onion, chopped
  • Cheese
  • Salt & pepper
  • Fresh crab

Just start mixing and fold in crab.  Spread on buns, bread, rolls, english muffins or whatever else you find in your cupboard.  If is is a soft bread, I butter and broil a bit before topping with crab mixture so the bread doesn’t get soggy. After topping with crab mixture, broil until hot. Top with whatever cheese your heart desires (mine desires provolone), broil until melted. Savor and consume.

For these melts we used Deanne’s rustic bread that was left over from the wedding. The best.

No Knead Rustic Bread

3 cups flour
1/4 t yeast
1 1/4 t salt
1 5/8 cups warm water
Cornmeal

Mix all ingredients except cornmeal
Let sit on counter for 16 to 18 hrs. Put flour on counter. Dump dough on counter. Mix enough flour into it to make dough not to sticky. Form into flattened ball. Roll it into cornmeal. Put in greased pie pan. Let rise for 2 hrs. Bake covered for 30 minutes at 450 degrees. Uncover. Bake an additional 15 minutes. Cool.
