Pasta & Salad

This week has been pasta & salad week.  Last night we tried Levi’s sister, Tyra’s, recipe from the family cookbook.  If you like chipotle, this is the recipe for you.  I am on my second bowl of leftovers as I post this. LOVED it and will definitely be making it again.  We also tried cousin Donna’s homemade ranch, so fresh and delicious.

Garden Herb Ranch Dressing

1/2 tsp. dry mustard
1/4 tsp. cold water
2 3/4 c. mayonnaise
1 c. buttermilk
7 T. sour cream
2 1/2 T. apple cider vinegar
1 1/2 T. Worcestershire
1 1/2 T. thinly sliced scallions(green & whites)
1-2 tsp. minced garlic
2 tsp. minced fresh Italian parsley
1 tsp. each minced fresh dill and basil(or 1/2 tsp. dried each)
1/2 tsp. minced fresh oregano(or 1/4 tsp. dried)
1/2 tsp each salt & pepper

 

Spicy Chicken Chipotle Pasta

1 c. heavy whipping cream
1-2 T. vegetable oil
1 T. butter
2 chicken breasts, cubed
4 garlic cloves, minced
1/2 small onion, minced
2 T. tomato paste
2-4 T. chopped chipotle peppers in adobo sauce
1/2 red and yellow peppers, diced
1/2 bag frozen peas, thawed
1/4 tsp. cayenne pepper, more(or less) if desired
1/2 T. crushed red pepper, more(or less) if desired
1 T. salt
1/4 tsp. pepper
1 c. shredded Parmesan cheese
1/2 lb. penne pasta
2 green onions, thinly sliced

Prepare pasta according to package directions.  Heat cream to a simmer.  Add the tomato paste, chipotle pepper, cayenne, crushed red pepper, salt and pepper.  Stir to blend.  Heat 1 T. oil in skillet on medium high heat and sauté the chicken until cooked through.  Remove from heat.  Place on dish.  In same skillet add the butter and rest of oil.  Add garlic, onions and peppers.  sauté for 5 minutes.  Add peas, heat through.  Add chicken back into skillet and set aside.  Add chicken mixture to sauce, add the cheese and stir until melted.  Mix with the penne.  Top each serving with extra Parmesan cheese and green onions.
