Homemade Caesar Dressing

This is Donna’s (Levi’s cousin) recipe, that I got off Sharla’s blog (it is also in the cookbook).  I tried it for the first time last night and it is so easy and delicious.

Donna’s Caesar Dressing

1 cup mayo
1 tsp Dijon mustard
1 garlic clove
1/4 cup grated Parmesan cheese
1 TBS red wine vinegar
1 TBS lemon juice
3/4 tsp Tabasco
3/4 tsp Worcester

I used the dressing for Mary & Angela’s Chicken Caesar Pasta recipe from the new Stenersen family cookbook. YUM. Yum, yum, yum.

Chicken Caesar Pasta

1 cup cubed cooked chicken (I used tenderloins , seasoned and Sautéed with garlic)
2 cups uncooked penne pasta
3/4 cup creamy caesar dressing (Donna’s!)
1/2 cup chicken broth

1/3 cup chopped green onion
1/4 cup finely chopped red bell pepper
1 1/2 cup shredded mozzarella
1 1/2 cup Caesar seasoned croutons (didn’t have any so I made my own)
1/4 cup grated Parmesan

Preheat oven to 350 degrees.  Cook pasta according to package direction and drain (al dente please). Combine all ingredients except croutons and Parmesan and in a bowl. Add cooked pasta and stir to combine.  Spoon mixture into and ungreased 2 quart round casserole dish.  Top with croutons and Parmesan.

Once again I will have to ask you to excuse my photos.  I was too busy burning blackening croutons to fuss with camera settings. Thank you.
