Anna's 30th


My son, Riley, made my favorite chocolate cake recipe and I whipped up a batch of chocolate raspberry ganache in the morning.  By the time afternoon rolled around and I was supposed to assemble the cupcakes,  I could barely stay awake. This always happens when I am around 6 months along.


My beautiful baby sister is 30. I still can’t believe she has her driver’s license and is married with children, let alone turning 30 years old. We had a small group of family over last night for cake and coffee to celebrate.

I was laying in bed the other morning and wondering how I got to be 39 so quickly.  I pondered if I would want to go back to 20 and and came to the conclusion that I wouldn’t. It’s never as bad as it seems to get older. Whew.

Raspberry Chocolate Ganache:

1  and 1/4 c heavy cream

2 tbsp unsalted butter

2 tbsp light corn syrup

1 pound semisweet or bittersweet (not unsweetened) chocolate, chopped coarse

1/2 c seedless raspberry jam

In a saucepan bring cream, butter, and corn syrup to a boil over moderate hear and romove pan from heat. Add chocolate, swirling pan to submerge chocolate in hot mixture, and let stand 3 minutes. Whisk ganache until smooth. Stir in jam.  Transfer to a bowl and chill, covered, for at least 2 hours and up to 3 days.

For gancahe filled cupcakes:

Cut a small section out of top/middle of cupcake. Spoon in a small amount of ganache and frost with a chocolate raspberry frosting.

It was dark by the time the cupcakes were done and sadly I didn’t get good photos of the finished treat.

  3. Happy Birthday Anna! Wish I could have been there to celebrate! Fun! Im pretty sure Anna is right ther with you Jen …wondering how she got to 30 already. I swear we were just pg with Duey &Trae, hanging out at the lake everyday:-) good times!

  5. Sounds amazing! Happy Birthday to your sister. You are right, getting older is not so bad. I had a tough time with turning 40, but got over it quickly and moved on. 🙂
