The boys are back from the ocean with a mess of fresh halibut & crab.  On the menu tonight: Crab chowder, panko breaded halibut & crab won-tons.

Windy Ridge Crab Chowder

Ingredients

  • 5 cups potatoes diced (we leave the peelings on)
  • 3 bell peppers diced (red, yellow, orange or green)
  • 1 large sweet onion diced
  • 4 cups frozen sweet corn
  • 3-4 cups fresh crab
  • 1 quart heavy whipping cream
  • 1 cube butter
  • salt & pepper

Put potatoes, peppers, onion & corn into kettle. Cover with water and boil until tender(water about 1/2″ – 1″ above veggies).   Add cream & butter.  Simmer until heated through.  Stir in crab. Season to taste (we usually just add salt & pepper). Voila.

Serves: a bunch

  5. Oh WOW…. Halibut…. I think Halibut is my favorite and I have eaten just about every fish from the sea, (hard to beat copper river salmon) but Halibut is delicious, can’t wait for your recipes!!

  7. Oooh, sounds like a delicious dinner!!! I LOVE crab won-tons! Do you use crab with cream cheese, green onions, garlic and soy sauce? That’s what I put in my crab won-tons.

    the photos of your boys with fish make me happy cause Eden starting fishing with my husband and maybe
    it will be something she keeps on enjoying to do with daddy as she gets older! right now she just loves
    casting with her princess rod and reeling it right back out. She wore the gossamer dress for our family photos, and also her eden’s long lacy white skirt. I know you are busy, but I will send you the link to the proofs once I get it.
