Levi spent winter break making concrete counter tops and putting in new lighting over the serving counter. This is where we always serve the food, buffet style. It is in the middle of the house. A handy pass-through between the dining room and kitchen, but it does not get enough natural light.
I thought I should let you know that Pumpkin Chip Muffins from the family cookbook are a fall/winter staple in our household. Easy to whip up and delicious with a dollop of cream cheese frosting.
Pumpkin Chip Muffins
4 eggs
2 c. sugar
1 (15 oz.) can pumpkin
1 1/2 c. oil
1 1/2 c. flour
2 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
1 tsp. salt
2c. chocolate chips
Mix first 4 ingredients. Add next 5 ingredients. Mix well and fold in chips. Bake in lined or greased muffin tins at 400 degrees fro 15-18 minutes.
