Landon has been working hard with Levi so I decided I would make supper Saturday night.
Fresh Cream of Broccoli Soup
Ingredients:
- 4 celery ribs, chopped
- 2 cloves fresh garlic, minced
- 1 large onion, chopped
- 5 tablespoons butter
- 2 bunches broccoli, trimmed and coarsely chopped (about 8 cups)
- 1-1/2 cups chicken broth
- 1/2 teaspoon pepper
- 2 tablespoons cornstarch
- 1/4 cup water
- 1 pint heavy whipping cream
Directions:
In a large saucepan, saute celery, onion & garlic in butter until tender. Add the broccoli, broth, and pepper; bring to a boil. Reduce heat; cover and simmer for 45 minutes or until broccoli is tender.
In a small bowl, combine cornstarch and water until smooth. Stir into soup. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat to low. Stir in cream; cook 10 minutes longer or until heated through. Yield: 6-8 servings. Of course we double, triple and sometimes quadruple recipes at Windy Ridge. Best enjoyed in front of a crackling fire served with bread*
*also best if you are 22 weeks pregnant
In the end I couldn’t keep Landon away from the kitchen and he whipped up these delicious glazed chicken skewers. I am sorry I don’t have any idea how he made them so cannot share this recipe.

I need a Landon until the end of October when this baby comes! Did he start cooking on his own or did you teach him? I need some advice, my oldest son is 9 and he likes to help but makes such a mess it takes longer to clean up so I usually don’t have him help.
