What a joyful and blessed Christmas we had. I turned a corner in the pregnancy sickness, the weather was delightful and it just seemed so meaningful this year as we took the time to read about and discuss the true spirit of Christmas every day of Advent. We had our Christmas Eve dinner here, as always. We made Pioneer Woman’s herb crusted Prime Rib and Creamy Herbed Potatoes served up individually in cheerful red ramekins. Very delicious and I would definitely make both recipes again. We had the Windy Ridge kitchen bustling while 5 of us ladies prepared the dinner and served the kids early so that us grown-ups could enjoy our food at the big dining table in peace. It all worked out wonderfully. After dinner we sang Christmas carols. A comical thing it was as we tried new songs and sang boisterously off tune. We finished the evening with sugary Christmas treats and crème brûlée with a pinch of cappuccino and fresh raspberries.

I did the Pioneer Woman Prime Rib for Christmas dinner also. It was the best cooked meat that I’ve ever cooked. No left overs.
